Mix the following and let the batter rest for atleast 10 minutes:
2 large Bananas with brown spots (ripen)
1/2 cup low-fat Yogurt (plain)
1
teaspoon Baking Soda
Mix the following and set it aside:
1/4 cup Chopped Walnuts (or any nut)
1 cup All-purpose Flour
1 cup All-purpose Flour
1/2 cup Whole Wheat Flour
1
tsp Baking powder
1/4 tsp Salt
Optional: 1/2 tsp Cinnamon powder
Optional: 1/2 tsp Cinnamon powder
Whisk the following and set it aside:
1 large Egg (or 2 large Egg Whites)
1/4 cup Extra Light Olive Oil (or any oil)
3/4 cup Sugar (preferably light brown)
1 tsp Pure Vanilla Extract
Now combine the Banana and Egg mixtures together.Combine the Flour mixture to the Banana-Egg mix.
Fold them all gently until no dry flour is present. Do not over mix though.
Grease a 8x4 pan or a loaf pan with butter or cooking spray or oil.
Transfer the batter to the pan. Level the batter in the pan by giving it a gentle shake.
Optional: Sprinkle some Sliced Almonds/Walnuts on top
Preheat the oven to 350 degrees F.
Place the Pan in the center rack and bake for 45-50 minutes
You can easily tell by the aroma that the bread is done.
