Idiyappam in 15 minutes


Sometime back I realized that my previous entry for Idiyappam does not have the recipe. :-) Sorry about that, guess I just got carried away with all the excitements it brought about that I forgot to put out the recipe.
Better late than never, what say? Today dear husband opted for Idiyappam after I insisted so much that it is not at all difficult for me and that it would take only about 15 mins of my time. I was having a bad headache and he was concerned if this would be extra work. As planned and promised it took only about 15 minutes. Needless to mention that it was so satisfying to see him savor the dish. He added, "Of all the items that you do in a jiffy, this is Number One." Added bonus is that I can update the blog with the missing recipe as well. ;-) So here you go:

Makes 1 Large Serving:
2/3 cups of Idiyappam flour
3/4th cup + 1 to 2 Tbsp of  of hot water
1/4 tsp of Salt

  • Microwave 1 cup of water for 1 minute on high power
  • Add 1/4 tsp of salt (you may add about 1/8th of a tsp if you may prefer so)
  • Add few drops of oil
  • Pour the water little by little to the dry flour as needed
  • As you pour the water use a spoon of fork to mix the flour swiftly
  • Knead the flour to a soft pliable dough
  • Spread a few drops of oil over the dough and keep it covered
  • Quickly (yes quickly. You do not want the dough to lose its moisture) set the Idly vessel (or any steamer), add little water, cover and bring it to a boil
  • While steam is forming in the Idly vessel,  grease the steamer plate (I use a colander as shown above) and the inside of the Murukku Pidi (the mould) with little oil.
  • Fill the Murukku pidi with the dough
  • Press the pidi and make the idiyappam following a circular pattern over the steamer plate.
  • Carefully place the plate inside the idly vessel (Make sure the vessel has enough hot water to produce steam for the next 10 minutes. If not, refill with hot water)
  • Cover and cook for 10 minutes
Once the idiyappam is cooked, carefully take it out and flip it over a bowl or plate.
Gently separate the noodles.
Serve hot with any spicy side or with sweetened coconut milk.

The whole process will take about 15 minutes if you plan and multitask. :D Enjoy your dish!
